The best simple chicken and dumplings recipe
Meal: Chicken and Dumplings
This recipe is nothing fancy! I tried to find a recipe similar to the one my mom makes but couldn’t find one...so here’s my own!
Chicken and Dumplings
Ingredients
- 2-3 chicken breasts, butterflied
- 2 T butter
- 3-4 stalks celery, diced
- 2 carrots, diced
- 1 onoin, diced
- 1 clove garlic
- 4 cups of chicken stock (1 boxed container)
- Salt and pepper
- ¼ tsp thyme, or two sprigs fresh thyme
- Dumplings:
- 1 cup flour
- 1 T baking powder
- ¾ c milk
- 2 T melted butter
- Salt and pepper
- ½ tsp Chives (if you want to get fancy)
Make the soup:
- Heat a pan over medium-high heat and add the butter. Brown seasoned (salt and pepper) chicken breasts and then remove from pan.
- Add diced celery, carrots, and onion. Season with salt and pepper and saute for 5 minutes.
- Add diced garlic and saute for 1 minute.
- Add stock to pan and scrape up any browned bits!
- Add thyme and chicken back to pot. Simmer for 10 minutes until chicken is cooked through.
- Remove chicken and shred, add back to pot.
- Mix together dumplings.
- Drop dumplings into soup. I use a small cookie scoop (they can be about golf-ball size)
- Cover and cook with lid on for 10 minutes.
- Uncover and cook for 10 more minutes.
- Enjoy!
