The best simple chicken and dumplings recipe

Meal: Chicken and Dumplings

This recipe is nothing fancy!  I tried to find a recipe similar to the one my mom makes but couldn’t find one...so here’s my own!

Chicken and Dumplings

Ingredients

  • 2-3 chicken breasts, butterflied 
  • 2 T butter
  • 3-4 stalks celery, diced
  • 2 carrots, diced
  • 1 onoin, diced
  • 1 clove garlic
  • 4 cups of chicken stock (1 boxed container)
  • Salt and pepper
  • ¼ tsp thyme, or two sprigs fresh thyme
  • Dumplings:
    • 1 cup flour
    • 1 T baking powder
    • ¾ c milk
    • 2 T melted butter
    • Salt and pepper
    • ½ tsp Chives (if you want to get fancy)

Make the soup:

  1. Heat a pan over medium-high heat and add the butter.  Brown seasoned (salt and pepper) chicken breasts and then remove from pan.
  2. Add diced celery, carrots, and onion.  Season with salt and pepper and saute for 5 minutes.
  3. Add diced garlic and saute for 1 minute.
  4. Add stock to pan and scrape up any browned bits!
  5. Add thyme and chicken back to pot.  Simmer for 10 minutes until chicken is cooked through.  
  6. Remove chicken and shred, add back to pot.
  7. Mix together dumplings.  
  8. Drop dumplings into soup.  I use a small cookie scoop (they can be about golf-ball size)
  9. Cover and cook with lid on for 10 minutes.
  10. Uncover and cook for 10 more minutes.
  11. Enjoy!
